Native Fusion : Seafood with Macadamia Oil Fried Kale Chips and Salsa

Seafood with Kale Chips fried in Macadamia Oil, with an Oyster Mushroom Salsa and Finger Limes 


 gather per serve : 

Macadamia Oil
100 grams of Seafood
100 grams of Kale
a handful of Oyster Mushrooms 
half a Capsicum
1 Finger Lime


fuse them together : 

use a medium to high heat to get the frying pan hot, then drizzle in some macadamia oil.
spread out the kale across the pan, and as it starts to heat, ensure all the kale gets oil.
as the kale shrinks, add more kale to the pan. 
cover and cook for around 10-15 minutes, stirring ocassionally.
remove the kale and place it in a pile on the plate so you can cover to keep it warm.

add a little more macadamia oil in the pan.
place in the chopped capsicum and oyster mushrooms.
fry til softer and browned. 

in a separate hot pan, drizzle some macadamia oil, then once hot, add in the seafood.
cover and cook for a few minutes, until you can see that it is no longer looking raw.
the seafood only takes a few minutes to cook.

now you can plate up all your cooked ingredients
and remember to add your finger lime for that extra superfood zing!
